Monday: Fend For Self
My kids love these nights!!! They get to eat whatever they want as long as I don't have to cook it. When I say whatever that is what I mean. It is a free for all and it doesn't hurt to have a fun night every once in awhile. Gives me a break and they absolutely love it. Win, Win!!!
Tuesday: Mexicali Chicken
1 whole chicken or 4-6 chicken breasts
1 16 oz bag frozen corn
1 can black beans, drained
1 16 oz jar hot sauce or 2-3 cans diced tomatos
Place all ingredients in crockpot on low all day.
To serve:
Debone or shred chicken before serving.
Serve with tortillas or over rice
Wednesday: Fettucini Alfredo
Thursday: Chipolte Chicken Taco Salad
Friday: Chicken Noodle Casserole
Ingredients:
4 chicken breasts or 1 bag of cubed pre-cooked chicken bites
1/2 large onion, diced
3 tablespoons butter
2 cans cream of chicken soup
2 cups shredded cheese
1 cup milk
1 bag or box of cooked pasta shells, spirals, or pasta of your choice (not noodles)
1/4 cup cracker crumbs
Directions:
Saute onions until tender
Add in soup and 1 1/2 cups cheese; gradually stir in milk
Cook over medium heat until cheese melts; stir in chicken and cooked pasta
Taste and add salt and pepper to taste
Transfer mixture to a greased 2 1/2 quart casserole dish; sprinkle with cracker crumbs
Bake in a preheated 350 degree oven for 30 minutes or until heated through
Top with remaining 1/2 cup cheese and bake 5 minutes
To serve:
Serve with steamed carrots
Saturday: Hamburgers & Homemade Chips
Dessert for the week: Peppermint Brownies
